Walnut and Honey Tart

Pastry: 6 oz plain flour 3 oz butter

3 tablespoons ice cold water

Filling: 3 oz butter 5 oz soft brown sugar

6 oz liquid honey 4 oz walnut halves

3 eggs, beaten

half teaspoon vanilla essence

grated rind of an orange

Cut the butter into small pieces and rub into the sieved flour. Slowly add the ice cold water and mix to form the pastry. Roll out and line an 8” flan dish with the pastry and bake blind for 5-7 mins at 400 ° F. Leave to cool. Cream butter and sugar, add orange rind then gradually beat in the eggs. Add honey and vanilla essence, beat again. Sprinkle walnuts in the bottom of the pastry case and pour in the honeyed mixture. Bake for 45 mins at 400 ° F. If the filling browns too quickly lower the heat slightly.
